Hello. I'm very new to vintage Honda bikes and trying to learn where to source things like carb kits, etc... Yes, Amazon has them, but not always the best quality.

I've nothing particularly good to say about carb kits. I've had both 'Rusty Riders' and Keyster kits. I would try and get hold of genuine Keihin parts wherever possible, might not be possible. Even some of David Silvers carb parts are pattern ones now.
 
Are you just looking for gaskets?
I have had very good luck with rockymountainatv.com, they have lots of stuff in stock and ship quickly. Their web site is sometimes a little clunky for the older bikes (you have to search Honda->models with no year-> then your bike, see screenshot):

I got gaskets from them when I did the R carb on my 175 and was happy with the parts.

You have to be careful with carb kits anyway, typically most kits have inaccurately-sized brass parts in them which will cause more problems than they solve. You'll want to keep and clean the (hopefully) original brass parts from your carbs along with new gaskets.
